{Ryan's favorite recipe}

I know a lot of people that use their blog as their journal, although maybe not being quite as candid as you would in a journal you keep under your matress. :) I think this is a fantastic idea. One of the girls that I blog stalk does a thing called "Memory Monday" where she pulls an idea out of a memory jar and blogs about it. My cousin, Lindsay, uses a blog called Sunday Scribblings to get topics for her bloggings. Anyway, so in addition to the cute pictures of my baby (although she isn't much of a baby anymore...she'll be TWO in just two months!) I'll be using this for my journal and memories. Feel free to read these, or just ignore them :)

Anyway...here is my first "journal entry"

Ryan's FAVORITE recipe is baked spaghetti. Every single time (no lie) that I ask him what he wants for dinner that is what he requests. I mean I really like it, but not enough to eat it every week. He will even eat the leftovers for breakfast, lunch and dinner! I know he loves it, so I try to make it every couple of months and for special occasions.

Here is the recipe:

Baked Spaghetti
Spaghetti noodles (enough to fill about 3/4 of a casserole dish)
8 oz. cream cheese
8 oz. sour cream
1 jar Spaghetti Sauce
Optional: green pepper, onion, mushrooms
1 pound ground beef or turkey
Shredded cheddar cheese or Parmesan

1. Cook noodles, drain and place in the casserole dish. Soften cream cheese.
2. Add sour cream to cream cheese and mix. Then add desired amount of Italian seasoning and onion power. Spread evenly over noodles.
3. Cook meat and saute onion and green pepper. Mix meat, onion, pepper, etc.
4. Spread sauce over sour cream and cream cheese. Sprinkle cheddar over top.
5. Bake at 350 F for 20-30 minutes. If it starts to bubble, it's done.

Tips:
You can make it like the recipe says, or I like to mix EVERYTHING together in a big bowl before putting it into the casserole dish. I find that its not as dry this way.
